Blueberry Oatmeal Muffins
Ingredients
1 1/3 cups flour
3/4 cups oats
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
3/4 cup milk
1/4 cup oil
3/4 cup fresh blueberries
Directions
Preheat oven to 400 ( my oven runs hot, so 375 works perfectly for these muffins, adjust the time) Grease muffins cups or line your muffin pan with liners.
Toss the oats and flour together. Add in the sugar baking powder and salt. In another bowl combine the wet ingredients , leave out the berries for now though. Make a well in the flour mixture and carefully pour in the wet mixture. Mix until just combined, you don't want to over mix, batter should be lumpy. Fold in carefully the blueberries then spoon batter into the prepared muffin tins. Bake for about 18 minutes or 20 till you can insert a toothpick in the center of the muffin and it comes out clean.
You can mix up the berries in this, when I have an overload of fresh fruits I'll cut them up for this muffin. Raspberries work great and so do blackberries. Strawberries tend to water down the batter so you should toss them with flour before adding them. Always fold in the berries of choice, and don't over mix or else the muffins won't rise. I liked sprinkling some cinnamon sugar on top, just a little before popping these in the oven. As always ~ Enjoy!
